Arborio rice is best known for making risotto, and it’s the one I recommend to use for this recipe. It’s a starchy rice, that when cooked in vegetable broth becomes rich and creamy.
Arborio rice is more chewy and less grainy than traditional rice. I like to think of it as a blend between rice and pasta.
How to know when risotto rice is cooked
The rice takes 20-30 minutes to cook. It’s important not to overcook Arborio rice, or it can turn mushy. The best method is to taste while making; you’re looking for a texture that is soft and pleasantly chewy.
How to make vegan risotto cheesy without cheese
Great question. After all, I did say this risotto is vegan. So how can you achieve a cheesy taste without cheese? Say hello to nutritional yeast. It’s a vegans go-to ingredient to make delicious cheesy dishes.
What exactly is nutritional yeast?
Nutritional yeast is a popular ingredient for us vegan foodies to bring cheesy, nutty and umami flavours to dishes. And, similar to its name – it’s rich in nutrients! (like b12 and protein).
But, your real question might be “where does nutritional yeast come from?” In fact, nutritional yeast comes from the yeast that forms when making molasses. (Surprising, as nutritional yeast is so savoury, yet molasses is so sweet!). It’s removed as a bi-product, and then deactivated to make nutritional yeast.
And not only is it good for us, it makes dishes naturally cheesy without adding processed faux-cheese alternatives. If you’re new to plant-based eating, you’re gonna want to add this ingredient to your pantry.
To make the mushrooms
It’s the mushrooms in this risotto dish that really takes the taste to the next level. Infusing with balsamic vinegar, these mushrooms certainly bring the umami to this dish. I have pan-fried mine on the stovetop with a bit of coconut oil and added a splash of balsamic to finish. (A little goes a long way).
