Chocolate Covered Frozen Bananas

Chocolate Covered Frozen Bananas. A quick and simple sweet treat to satisfy your sweet tooth. Healthy, vegan and gluten-free, they are a refreshing summer treat!

Ingredients

  • 3 bananas (150g each)
  • 3/4 cup semi-sweet dark chocolate chips
  • 1 tsp coconut oil
  • 1 tbsp almonds, chopped
  • 1 tbsp pistachios, chopped
  • 2 tsp cacao nibs

Instructions

  • Line a tray with parchment paper. Cut three bananas in half, and insert popsicle sticks into each half. Place on tray and put bananas in the freezer for 15 minutes to chill.
  • Add 2 inches water to a small saucepan and bring to simmer. Place a heatproof glass bowl on top of the pot, making sure the bottom of the bowl is not touching the simmering water. Add semi-sweet chocolate chips with a bit of coconut oil to the bowl. Stir gently until chocolate is smooth and melted.
  • Dip banana in dark chocolate, rolling to coat entirely. Then sprinkle with toppings (chopped almonds, pistachios or cacao nibs). Continue until you have made all your chocolate dipped bananas. Then, place in the freezer to chill entirely (at least 30 minutes).

Notes

Chocolate Covered Frozen Bananas will keep in freezer, tightly sealed for up to one week. For optimal taste, let frozen bananas thaw for 15 minutes before eating.
